The Posada Ingapirca Restaurant is the only organic highland kitchen within walking distance of the Ingapirca Archaeological Complex, in the province of Cañar. Every dish draws from the ancestral ingredients of the Ecuadorian sierra.
Quinoto, trout, and Cañari salad
Our Quinoto is prepared with organic quinoa from the Ecuadorian highlands, slow-cooked to a creamy, comforting texture. The trout arrives pan-seared, skin golden and flesh tender, alongside a fresh garden salad and yellow potato purée. And the Cañari Salad: white quinoa, tender fava beans, tomato and cucumber, dressed with fresh herbs from the Posada own garden.

You can savor chigüiles, tamales, and humitas, along with our signature quinoa soup. For mains, we serve chicken, beef, pork, trout, and lamb, plus sweets made from sambo, babaco, and apricot.
